Carrot Cake
  
 This is a very easy recipe that produces a
wonderful and healthy dessert by replacing butter with Mistral organic
extra virgin olive oil.
 
 1 1/3 C. Flour
 3/4 tsp. Baking Powder
 3/4 tsp. Baking Soda
 1/3 tsp. Salt
 1. tsp Cinnamon
 2 Large Eggs Beaten
 1 C. Sugar
 3/4 C Mistral organic extra virgin olive oil
 3/4 tsp. Vanilla
 2 C. Shredded Carrots
 Put all wet ingredients into a bowl and combine well, add to
that dry ingredients including carrots and mix together with spoon or
spatula.
Bake @ 325* for 45-55 Min or until toothpick when inserted comes out
clean
